Apple Pie with Maple sugar crust


Makes 8 servings 


The flavors of the sugar maple, maple syrup, and apples are combined in this most American of desserts. Serve with homemade vanilla ice cream.

Ingredients:

1. 2 cups of all-purpose flour
2. 1/4 cup more than 2 tablespoons of sugar maple
3. 1/2 teaspoon of salt
4. 12 tablespoons of sticks (1 1/2") unsalted butter, cut into pieces of frozen peas and size
5.2 tablespoons of butter, cut into pieces of frozen peas and size
6. 1/4 cup ice water, mixed with a few drops of lemon juice

To fill: 

7. 10 to 12 medium-sized Granny Smith and McIntosh apples, peeled, cored, quartered, and then cut in thirds (10 cups)
8. 1/4 cup sugar
9. 2 teaspoons ground cinnamon
10. 1 teaspoon ground nutmeg
11. 1/4 cup of cornstarch
12. 2 tablespoons of arrowroot
13. 1/4 cup maple syrup
14. 1 large egg, lightly beaten with 2 tablespoons of water

Directions:

Cake Dough: Combine flour, 2 tablespoons of maple sugar and salt in the bowl of an electric mixer and turn the machine to its lowest position. Add the butter and mix gradually frozen during 5 minutes, or until butter begins to break. Add the frozen butter and mix for 2 to 3 minutes more. Drizzle at the water ice, just enough so that the dough to start mass together. Leave the dough to rest for 10 minutes, form in 2 discs, and refrigerate for 30 minutes. Can be done with 3 days in advance and chilled, covered.
Preheat oven to 400 degrees F.

For the filling: In a large bowl, combine apples, sugar, cinnamon, nutmeg, cornstarch, and the arrowroot. Add maple syrup and mix gently.

On a floured surface, roll out 1 Circle of earth and place in a pie pan of 10 inches. Add the apple filling. Unroll the second crust, place it on top of the fill, and crimp the edges. Brush the top of the crust by washing with the egg, sprinkle with the remaining half of maple sugar, and cut several vents in the bark.

Bake the cake for 30 minutes. Reduce oven temperature to 350 degrees F, sprinkle the remaining sugar on the top of the crust, and bake for 30 minutes or until the apple filling is bubbling. Must be baked and served on the same day.
