BEST BROWNIES
1/2 cup (1 stick) butter or margarine
1 cup sugar
1 teaspoon vanilla
2 eggs
1/3 of a cup of cocoa
½ cup of flour
1/4 teaspoon baking powder
1/8 teaspoon salt
1. Preheat the oven to 350F. Grease a square baking dish 9". Set aside.°
2. In the great test of microwave container, place the margarine. In the microwave on HIGH 30 seconds or until it melts. Add the sugar and vanilla. Add the eggs, one at a time, beating well with a wooden spoon after each addition.
3. Add the cocoa and beat until well blended. Add the flour, baking powder and salt; beat well. Pour into prepared pan.
4. Bake for 20 to 25 minutes or until the brownies are just starting to pull the sides of the bread. Cool in the tray of a wire rack. Cut into bars.
Makes 16 brownies.
Variation:
Instead of the baking tray square, use muffin pans. Line 18 muffin pans and Divide batter equally among all. Bake for 15 to 20 minutes or until the outside edges is performed when tested with a toothpick. The centers can still be sticky. Cool and sprinkle with confectioners sugar.
