What Can You Do To Save Your CHICKEN CASSEROLE From Destruction By Social Media?

Chicken casserole

What you need (serves 8)

· 4 chicken breasts, cut into pieces
· 2/3 tablespoons olive oil
· - 2 medium onion, peeled and sliced
· 1 medium slicing - Leek
· 6 medium carrots - peeled and cut into slices
· 6 mushrooms, half/Quatered
· 2 dessert spoon mixture of dried herbs or 2 tablespoons of the mixture of fresh herbs
· 2 x 400g  can of diced tomatoes
· 600ml (1 pint) of chicken or vegetable broth (using two stock cube with boiling water)
· 2/3 teaspoons of flour (seasoned with black pepper)
· 5 medium potatoes cut into large chunks
· Salt and pepper to taste

How to make

1. Preheat the oven to 180C/350F/Gas Mark 4
2. Coat the chicken pieces in the flour. You can do this by placing the flour and chicken in a plastic          bag for a sandwich and agitation.
3. Heat the oil in a skillet or pan and carefully seal the chicken in it (cook until it turns white and begins to brown a little). Be careful not to warm the oil. 
4. Place chicken on the bottom of the casserole and cover (which we will be adding to this later!).
5. Using the same saucepan, cook onion and leek in any oil during 5 minutes. Add them to the                casserole dish.
6. Add the remaining ingredients: mushrooms, carrots, tomatoes, potatoes, herbs, and the broth to             the pan. Season with salt and  pepper.
7. Bring the mixture to a boil, stirring occasionally.
8. Cover the dish with a lid and cook for 45-60 minutes in the oven or until chicken is tender.
