How To Make More FRIED RICE RECIPE By Doing Less
Vegetable Fried Rice
Ingredients:
· 3 cups of brown rice
· 1 package of 10 ounces of frozen mixed vegetables (or 2 cups of fresh vegetables, chopped)
· 1 small onion, finely chopped
· 2 eggs, lightly beaten
· 2 tablespoons olive oil
· 3 teaspoons of soy sauce low in sodium
Directions:
1. In a large saucepan, heat oil over medium-high heat. Add the onion and rice. Stir and cook until onion is browned, about 5 minutes.
2. Reduce heat to medium and add vegetables to rice mixture. Cook 2 minutes for frozen vegetables and 5-7 minutes for fresh vegetables.
3. Spread the mixture on the sides of the pan, leaving space in the middle of the eggs.
4. Add eggs and stir until it is cooked firm.
5. Mix the eggs with rice and vegetables, then sprinkle with soy sauce.
