Apple Fritters Muffins
When I was little I loved apple fritters. The sticky, gooey, Apple-and donut was my favorite thing to eat on Saturday morning. Well, from traditional apple fritters are filled with sugar, unhealthy fats, carbohydrates and proteins of the gluten-free diet, eating one is simply not an option.
This recipe for apple fritters Muffins captures the flavor and experience of donut donuts of apple without any of the consequences! In fact, you will be receiving the protein and fiber, even some of these delicacies.
This is what you need to 12:
• 1 tablespoon of coconut oil.
• 2 organic apples, chopped
• 1/4 cup raisins organic golden
• 1/4 cup of pecans, chopped
• 4 tablespoons water
• 1 tablespoon of cinnamon plus a hyphen
• 1 tablespoon maple syrup pure grade B
• 9 cage-free eggs organic matter
• 3 tablespoons unsweetened coconut milk
• 1 1/2 tablespoons of coconut flour
• 1/4 teaspoon of baking soda
• Pinch of salt
1. Preheat oven to 350 degrees F. Lightly greases a 12-loaf of bread with coconut oil.
2. In a frying pan heat the coconut oil in the middle. Add the apples, raisins, pecans, water, cinnamon and maple syrup. Cook stirring constantly until apples become sensitive. Remove from heat and let cool.
3. In a bowl, combine eggs, coconut milk, coconut flour, baking soda, a pinch of cinnamon and salt. Add two-thirds of the mixture of apples to the eggs. Mix until well combined.
4. Using a 1/4 cup, fill each muffin tin prepared with egg mixture. Place a spoonful of the mixture of apples reserved at the top of each muffin.
5. Bake for 35 minutes or until it is fully established.
