CHICKEN DINNER SOUP

8 cups water
3 lb whole broiler chicken, quartered, skin removed
3 stalks celery, cut into strips
3 medium carrots long strips
6 new potatoes
1 small leek cut into strips
1 ½ tsp dried tarragon leaves
1 tsp black pepper
1 tsp salt

1. Combine water and chicken pieces in the 6-quart pot.  Bring to boil over high heat.  Reduce heat to low.  Cover. Simmer for 1 hour 15 minutes, skimming occasionally.

2. Remove chicken from broth.  Chill broth covered, at least 4 hours.  Cut meat from bones.  Discard bones.  Coarsely shred chicken.  Wrap in plastic wrap.  Chill

3. Skim and discard solidified fat from top of the broth.  Strain broth.  In a 6-quart pot, combine broth, chicken and remaining ingredients.  Bring to boil over high heat.  Reduce heat to medium-low.  Simmer for 20-30 minutes, or until potatoes are tender.


Chicken and stir-fried vegetables


Ingredients:


1 medium onion, sliced
2 tablespoons vegetable oil
1 medium green bell pepper, cut into strips
1 ½ cups of tomato sauce
1 pound skinless, boneless chicken croquettes, cut into strips
1 sliced zucchini medium
1 teaspoon dried basil
1 teaspoon dried parsley
½ teaspoon dried thyme
Freshly ground pepper to taste

Directions:


1. In a large skillet on medium, cook onion in hot oil 4 minutes until tender. 

2. Add peppers and tomato sauce. Bring to the boil. Reduce heat to low and simmer for 10                      minutes. 

3. Add chicken, zucchini, basil, parsley, and thyme. Cook 10-15 minutes longer or until chicken is cooked. 

4. Season with pepper to taste.

RED HOT Chicken:


Ingredients:

Boneless chicken thighs.
Frank's Red Hot Sauce
Mayonnaise (enough to thicken the sauce hot)

Lettuce Salad:


Ingredients:

Large sheet or sheets of red leaf lettuce
The Chinese or the normal cabbage (crunch) finely shredded
Finely chopped lettuce
The red onion
Vinaigrette or Italian Dressing

The vegetables of your choice, chopped (although cucumber mixture will make a little Aguado)

Combine all the ingredients except the large lettuce leaves - Put the mixture of the salad in the large lettuce leaves and swaying as if you are creating a roll cabbage or egg roll.
