Excellent Salmon Recipe:
For one big fillet (double if you cook 2 big fillets):
Chop ½ onions finelyAdd 3tbls butter (or more if you’re feeling deprived)
Add 3-4tbls soy sauce
Add 1-2tbls Worchester sauce
Put chopped onion & all ingredients in a microwave-safe bowl
Microwave with paper-towel cover for about 3-3.5 minutes—want to cook/caramelize the onions
Let cool for a couple minutes—add 2-3tbls real mayo (no lite allowed)
Whether you bake or barbeque, salt fillet lightly (I use Johnny’s seasoning salt).
On BBQ, cook fillets meat down for 6-10 minutes (depending on the size of fillet). Flip fillets over & pour/spread onion/butter/soy mixture on top of fillet (skin down of course)
These fillets will be cooked to perfection in the oven at 335 degrees for 18-25 minutes (depending on thickness)—about the same on a barbeque at that temp.
Add some alder chips to your BBQ for the real kicker (Indian style!)
Do not overcook! Allow Captain Kurt to pre-taste all salmon (in case it’s poisonous)
